POTATO SOUP
10 to 14 potatoes, peeled and diced
1 to 1 1/2 lb. Polish Kielbasa
Enough water to just cover above ingredients
6 to 7 beef bouillon cubes (chicken can be substituted)
2 tsp. black pepper (more or less to taste)
1/2 tsp. salt (more or less to taste)
1 lg. or 2 sm. onions, sliced or diced
After combining all ingredients, heat to boiling. Lower temperature and cook 
until
potatoes are soft. Soup can be thickened by adding instant, mashed potatoes. 
Serve
with sour cream mixed in.  Enjoy.

POTATO SOUP WITH GREEN CHILES
   2 3 tablespoons vegetable oil
   1 small onion, chopped
   1-2 cloves garlic, chopped
   1/2 teaspoon cumin
   1/4 teaspoon black pepper
   Oregano (just a pinch)
   2 medium potatoes, peeled, diced
   8 whole roasted, peeled green chilies, chopped (or about 2/3 cup canned)
   5 cups chicken broth
   Heat
 oil in 2 quart saucepan, add onion and garlic, cover, cook over low heat until 
the
onion wilts (about 5 min). Turn up the heat to medium, uncover, and add cumin 
and
pepper. When the onion starts to brown (2 min?), add the rest of the 
ingredients,
bring to a boil and simmer for 45 minutes. Top with chopped cilantro and/or 
shredded
cheese. Add 1/2 cup sour cream and stir well just before serving.

POTATO SOUP 

4 cups diced potatoes
1 medium  onion
3 tblsp. flour
1 tblsp. butter
1 qt.  milk
1 egg, beaten
salt and pepper
parsley

Boil potatoes and onion in small amount of water until soft. Add  milk,
salt and pepper then reheat. Brown flour in the butter and blend  it
slowly into the potato mixture. Add a little water to the beaten egg  and
stir into the soup. Let it cook for a few minutes and serve with  a
sprinkling of chopped parsley.

Potato Soup

5 to 6 large potatos, peeled and diced
1 medium onion, chopped
2 stalks celery, chopped
3 c. skim milk
1/4 c. butter buds
Salt and pepper to taste

Cover potatoes, onion and celery with water and bring to a boil.
Lower heat and cook until tender--about 20-30 minutes. Drain 3/4 water
off and add milk. Simmer over low heat 15-20 minutes. Add butter buds,
salt and pepper.

Potato Soup with Spinach Dumplings

INGREDIENTS
2 cups cubed peeled potatoes
1/2 cup chopped onion
1/2 cup chopped sweet red pepper
2 tablespoons butter or margarine
3 cans (14-1/2 ounces each) chicken broth
1 package (10 ounces) frozen chopped spinach, thawed
1 cup seasoned dry bread crumbs
1 egg white, lightly beaten
Chopped fresh parsley
 
DIRECTIONS
In a large saucepan, combine potatoes, onion, red pepper, butter and
chicken broth; bring to a boil. Reduce heat; cover and simmer about 10
minutes or until the potatoes are tender. Remove from the heat. In a
small bowl, combine the spinach, bread crumbs and egg white; let stand
for 15 minutes. Shape into 1-in. balls; add to soup. Return to a boil;
reduce heat and simmer 10-15 minutes or until dumplings are firm.
Sprinkle with parsley. Yield: 4 servings.
