No need to go to any version in between, from 2.0 to 2.0.10 we only did
stability and security fixes anyhow, no real changes in functionality.
Oh yes, we also improved the import function for 1.x profiles, so,
actually, migrating should work even better with 2.0.10 than some random
older version. :)

What should I remove first, if anything?

My approach will be: (i am under windowsXP)
1. Stop SM.
2. Copy somewhere the 1.1.18 profile (in case of...)
3. Remove the SM 1.1.18 version
4. Install the SM 2.0.10
5. I think that if you start the SM 2.0.10 for the first time, the
profile migration will occur.

FWIW, my experience was the opposite. I have two identically configured
WinXP machines (except for some minor equipment differences such as
monitors), and I upgraded both from SM 1 a few months ago. On the
machine where I left V.1 in place and then removed it after installing
V.2, all went well. On the machine where I uninstalled V.1 first and
then installed V.2, SM created an entirely new profile and overlooked my
existing one, including all plugins and add-ons. I then had to complete
the upgrade manually.

I do remember being advised to remove V.1 before installing V.2, and I
followed directions before learning that they didn't work. It was the
second machine on which I installed right over V.1.

I had first installed 2.0 without removing 1.1 all goes well UNTIL i
removed 1.1 ... some windows links dissappered.

So i uninstall 2.0 then i removed the 2.0 profile.
Both versions now are uninstalled and the only profile is the 1.1 one.
Then i install 2.0 - all goes well and now last few days...
After uninstalling 2.0.4 in installed 2.0.10 and remove the 1.1 profile.

The above approach was what I did using Mac OS 10.6.4

I initially went from SM 1.1.18 to SM 2.0.6 without any problems. (Since
upgraded to 2.0.10)

The profile is now found in Home Folder/Library/Application Support/SeaMonkey
