Hi, this is done from iTunes. Connect your device and then tab to the 
source list. In case you have no source list, press control-s to toggle 
it on. Note that if it's on already, this hot key will toggle it off. In 
any case, once at the source list, press D for device and then down 
arrow once. Now you will be at your device. Press tab many times past 
the summary information and you swill reach the back up settings area 
eventually. Press space on back up to my computer and then space on the 
check box to encrypt the backup. Once you do, you will be prompted for a 
password. Type it in and then press tab and type it in again to confirm. 
Press ok or encrypt, can't remember the button title. Your device will 
do a back up and it will be encrypted from this point on.\

Hi, the capacity makes no difference and the model makes no difference.
So, feel free to restore away. One thing which helped me is encryping my
backup in iTunes. If your backup is encrypted, your email passwords, and
I think wi-fi passwords are also restored when you get your new iPhone
restored from the 4s image.
