When beets does a convert, does it write the metadata to the converted
file, or is it expecting the conversion utility to do it?

Conversion seems to go well, but album ReplayGain info is not being
transferred over. Only track gain.

In my config.yaml, I have asciify paths turned on with the following line:
asciify_paths: yes
When I import all my Weird Al albums, they get imported into two folders:
“Weird Al” Yankovic
and
_Weird Al_ Yankovic
The odd part is, albums are broken up. For example, “Weird Al”
Is there a preference I can set that will display the catalog number with
each release that shows up when it shows a list of releases?

When I actually ripped the CD, beets detected it properly.
The lesson here: If you didn't rip it yourself, then place your trust in
beets. It's probably right.

Sound Check is Apple proprietary form of ReplayGain. I was wondering if
beets supported it. I use beets to do ReplayGain and am amazed at how easy
it was to add ReplayGain to all my songs with two commands and some time.
iTunes calculates and applies Sound Check, when you add tracks to it. so

This wasn't just beets. Any program that used python-openssl was broken.
I fixed this by running:
sudo pip install -upgrade cryptography
Once done, i rebooted and all seemed OK with the world again.
