Joel, Epoxy will work just fine. I used West Six-10 epoxy to fill the screw holes from my old instruments in the cockpit. It is thickened, so it won’t run easily. Some foam filler on the larger holes might help. Tape plastic over one end of the hole and you should get a nice smooth
