Sugar's Chicken Salad Sandwiches



Ingredients:

1 bag of baby spinach leaves

1/3 red onion or to taste (diced

1sm. Green Bell Pepper (diced)

1 can of black olives (sliced and drained)

1 cup Broccoli Florets(chopped)

2 Stalks Celery (diced)

2 cans of Chicken in a can (in water and drained)

or you can either boil the chicken thighs or any part. I usually buy the pre 
-cooked whole chicken and shred it)

1 tea spoon of garlic

Lemon to taste

Salt & Pepper to taste

Mayonnaise to taste

6 Ounce Walnuts (chopped)-optional

Dried cranberries (also optional)

Hot sauce of your choice. My Daniel likes Tapa-Tio.



Directions:

In a Lg. Bowl, cut up baby spinach to smaller size.

Place chicken in the bolw, along with all the veggies.

*To get chicken to spread evenly, shred it a bit more. unless you wish for 
chunks as canned chicken comes in chunks. (optional)

Add mayo to the ingredients, enough to your taste. I add about 3 to 4 serving 
size spoons,

again, according to your taste, Drizzle a little lemon juice.

Salt and pepper to taste

* If your husband is like mine you will add some form of hot sauce, in my case 
Tapa Tio it is! *

You may serve salad in croissants or your choice of bread, or if you wish

you may serve with crackers.

Pork Chops And Rice

1 1/2 cups dry long-grain rice

2 cups water

4 pork chops

Salt and pepper to taste

1 (10 3/4 ounce) can cream of mushroom or celery soup

1 tablespoon chicken or beef bouillon granules or 1 bouillon cube

Spray interior of 4 quart slow cooker with nonstick cooking spray. Place
rice and water in cooker; mix well. Place chops over top of rice. Sprinkle
with salt and pepper. In a small bowl, stir together soup and bouillon.
Spoon over chops. Cover; cook on low for 6 to 8 hours, or until meat and
rice are tender but not dry.

Makes 4 servings.  Mama's Corner.

[CnD] DH IRISH CREAM FUDGE BROWNIES

DH IRISH CREAM FUDGE BROWNIES

. Servings:  : 25 2x2 inch brownies 

. Difficulty: Pretty Easy 

 

 

Ingredients

. 1 package (family size)
 Chewy Fudge Brownie Mix 

. 1/4 cup plain, fat-free greek yogurt 

. 3/4 cup irish cream liqueur, reduced to 1/2 cup 

. 1/4 cup 2% milk 

. 3 eggs 

. 1/2 cup mini semisweet chocolate baking chips 

 

Baking Instructions

1.Preheat the oven to 350 degrees. 

2.Line a 10x10 inch baking pan with parchment paper, with 2 inches of
overhang on each side. 

3.In a small saucepan over medium heat, bring the irish cream to a
rolling boil, and boil until reduced to 1/2 cup (about 4-5 minutes). Take
off heat. 

4.In a large mixing bowl, combine the brownie mix, yogurt, milk, and
eggs and mix by hand until fully incorporated. Slowly add and stir in the
irish cream, then add the chocolate chips and give a brief stir. Pour the
mixture into the pan, shaking and using a spatula to level. 

5.Bake for 20 minutes and check with a toothpick for doneness - a
toothpick inserted an inch from the edge should come out clean. If they're
not done, continue to check them at 2 minute intervals - it's important to
not overbake. 

6.When they're done, remove the pan to a cooling rack for 5 minutes.
After 5 minutes, remove the brownies from the pan using the parchment paper.
Place the brownies back on the cooling rack with the parchment paper and
cool completely before icing or cutting.
