Hi Paul,
I don't have problems building coot on Debian, be it stable (bullseye)
or testing (bookworm). Also the tests pass
as expected. This is with default options. It is just that the
build-it script seems to set a flag such that the static archives
instead of the dynamic libraries get packed

Try to download Bernhard's key bindings (coot wiki), center on empty map
of DNA and press N. It runs tool named Cootilus, which auto-builds
nucleic acids.
In Extension toolbar, You can run RCrane, which produce new tab designed
to build NA.
