I've tried to add IDNA coded domain to courier as hosteddomain and
making virtual users to it. But the emails doesn't go to users inbox
they are forwarded to relay smtp so courier thinks that it isn't
local/hosted. I've added normal domain identically and it works.

The syntax is weird.
Correct:
MAILDIRPATH=./Maildir
Incorrect:

This error seens to occur when 'configure' runs in the prep phase of
rpmbuild. When I run 'configure' manually in the rpm/BUILD/courier tree,
all seems OK. No error when going into 'afx'.

You're probably missing something. The mail server doesn't care about IDNA
coding, it deals with actual mail domains only.
IDNA coding only matters to mail clients, when they display mail addresses.
