How can I change it to use the Artist field instead?

Napster say that with 9 million tracks they don't have a record of what
is streamed at what bit rate. So no joy there. However, it would seem
fair to assume that the newest releases are streamed at 192kbps. What

You should definitely use a lossles format : FLAC, WAV or AIFF.
The latter is afaik a proprietary format, i.e. you can risk that some
of the tools available are not able to handle it. FLAC and WAV are by
far the most common one's.

ALAC is also a lossless format, although yes, it is proprietary (which is why
it's also known as Apple Lossless, I suppose..)
AIFF is well supported and tools are available to handle it, (including those
in Squeezebox/server).
