Double check that the Protect Content toggle is not checked under your preferences. I've accidentally ripped songs with that toggled on, and it puts WMA copy proteciton on the file. I only discovered it when I moved the music folder to a new PC and had Windows start refusing to play those files

Thomas, I may be wrong on this, but if anything I would think that you would have higher latency/jitter on the wireless side, not on the wired side. Since the wired is running behind the wireless, I wonder if your sound card/driver is somehow injecting latency? What type of card are you using?
