Cream Cheese Ranch Potatoes

8 baking potatoes, peeled and quartered
1 (8 ounce) package cream cheese, softened
1 (1 ounce) package dry Ranch-style dressing mix
1 (8 ounce) container sour cream
1/2 cup butter, softened

Bring a large pot of salted water to a boil. Add potatoes and cook until 
tender, about 25 minutes. Drain and mash.

In a large bowl beat the cream cheese and dressing mix until smooth. Stir in 
mashed potatoes, sour cream and butter; beat until desired consistency is 
reached.

Total Time: 45 min
Makes: About 3 (1-cup) jars or 48 servings, 1 Tbsp. each
 3 cups prepared strawberries(buy about 3 pt. fully ripe strawberries)  
3/4 cup water  
1 box SURE.JELL For Less or No Sugar Needed Recipes Premium Fruit Pectin  
1/2 cup SPLENDA® No Calorie Sweetener, Granularor 12 SPLENDA® Packets No 
Calorie Sweetener   


BRING boiling-water canner, half full with water, to simmer. Wash jars and 
screw bands in hot soapy water; rinse with warm water. Pour boiling water over 
flat lids in saucepan off the heat. Let stand in hot water until ready to use. 
Drain jars well before filling.  
STEM and crush strawberries thoroughly, one layer at a time. Measure exactly 3 
cups prepared fruit into 6- or 8-quart saucepot. Stir in water. Gradually add 
pectin, stirring until well blended.  
BRING mixture to full rolling boil (a boil that doesn't stop bubbling when 
stirred) on high heat, stirring constantly. Boil exactly 1 minute, stirring 
constantly. Remove from heat. Stir in SPLENDA® Granular or SPLENDA® Packets. 
Skim off any foam with metal spoon.  
LADLE immediately into prepared jars, filling to within 1/8 inch of tops.. Wipe 
jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars 
on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 
to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle 
boil. Process 10 minutes. Remove jars and place upright on towel to cool 
completely. After jars cool, check seals by pressing middle of lid with finger. 
(If lid springs back, lid is not sealed and refrigeration is necessary.)  
Substitute 
Prepare as directed, substituting 1 thawed can (12 oz.) frozen white grape 
juice or apple juice concentrate for the 3/4 cup water. Makes about 4 (1-cup) 
jars or 64 servings, 1 Tbsp. each. (Nutrition Information Per Serving with 
White Grape Juice: 20 calories, 5g carbohydrate, 4g sugars. Nutrition 
Information Per Serving with Apple Juice: 15 calories, 4g carbohydrate, 3g 
sugars. )

Inversion Method 
To use inversion instead of boiling water bath method, turn jars upside-down 
after bands have been screwed tightly. After 5 minutes, turn upright. Avoid 
improper lid seal by filling jars immediately with hot fruit mixture.

Quick Potatoes AuGratin

1 pkg. (16 oz) frozen hash browns
2 C. shredded Cheddar cheese
1 can (10 oz) cream of chicken soup
1 C. Miracle Whip
1/2 C. chopped onion
1/8 t. pepper
2 C. crushed corn flakes
2 T. butter melted

Heat oven to 350.  Mix potatoes, cheese, soup, Miracle Whip, onion and pepper.  
Spoon into 9x13 baking dish.  Sprinkle with combined crushed corn flakes and 
butter.  Bake 45-55 minutes or until thoroughly heated.

1 medium cucumber (peeled and slice thin)
2 cans frozen limeade concentrate
2 liters Sprite
 
Marinate cucumber slices overnight in 2 cans frozen concentrate limeade, 
mixed in a large mixing bowl.  Use plastic bowl, never metal.  In a large 
punch bowl, dump mixture of limeade and cucumbers.  Pour sprite over limeade 
mixture until punch bowl is almost full.  Add crushed ice and garnish the top 
with floating lime wheels.
 
a friend of mine from church thought of this recipe for a party.

6 tablespoons Water
2 teaspoons Cornstarch

In large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened 
condensed milk until smooth. Stir in lemon juice and vanilla. Pour into 
prepared pastry shell. Arrange apple slices over filling. In small saucepan, 
over LOW heat, dissolve cinnamon candies in 1/4 cup water. Stir together 
remaining 2 tbs. water and cornstarch; add to cinnamon mixture. Cook and stir 
until mixture thickens and boils. Remove from heat; cool slightly. Drizzle over 
apples. Chill 3 hours or until set. Refrigerate leftovers.

8 boneless chicken breast halves 
8 slices bacon 
1 can Campbell's® Condensed Cream of Mushroom Soup 
1 cup sour cream 

Directions:

PREHEAT oven to 275°F. Wrap 1 slice bacon around each chicken breast. Place in 
11x7 baking dish. Mix together soup and sour cream. Pour over chicken. Bake 2 
to 2 1/2 hr. or until done.

Use it like a salsa or dip for wontons or eggrolls.

Devil's Blood 

7 ozs. cayenne peppers, fresh or sub with jalapeno's
1 tbsp. honey or maple syrup
1 tbsp. liquid smoke 
2 tbsps. cognac

Roast the chiles until the skin start to blacken. Let them cool. Skin and 
seed the
chiles. 
Mix chiles, honey, cognac and salt in a food processor on high speed until 
you get a
smooth paste.
Boil the paste 5 minutes and fill it in small glass jars. Will keep for 
many months in
the refrigerator.

Chicken in Phyllo Pastry
(Marinate overnight.)
3 tablespoons lemon juice
2 tablespoons olive oil
1 teaspoon minced garlic
1 teaspoon oregano
4 skinless, boneless chicken breast halves, cut in 1/2 cubes
1/2 pound phyllo pastry, thawed
1/4 pound unsalted butter, melted

Combine lemon juice, olive oil, garlic, and oregano. Toss with 
chicken and marinate, covered and refrigerated, overnight.

Preheat oven to 400F.

With a scissors, cut stack of phyllo pastry in half lengthwise, 
making two long strips. Working with one sheet of pastry at a time 
and keeping the rest covered, fold a sheet in half crosswise and 
brush with butter.

Place a few pieces of chicken at the short end. Roll up pastry once 
to cover chicken, then fold in both sides and continue rolling to 
make a neat package. Brush with butter. Arrange seam side down on a 
baking sheet. Repeat with remaining packets.

Bake 20-25 minutes, until golden. Serve hot or at room temperature.

2 (10 ounce) packages frozen chopped broccoli 
8 ounces processed cheese food, shredded 
1/4 pound butter 
32 buttery round crackers, crushed 

Preheat oven to 350 degrees F (175 degrees C). 
Place broccoli in casserole dish and cover with cheese. 
In a large skillet over medium heat, melt the butter; add the cracker 
crumbs and stir until evenly coated. Sprinkle over cheese. 
Bake for 30 minutes.

CRAB CORN CHOWDER   
 
1 lb. fresh crabmeat
4 slices bacon, diced
3/4 c. chopped onion
2 med. potatoes, diced
1 1/2 c. water
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. dill weed
1 can whole kernel corn (or fresh or frozen)
1 1/2 tbsp. flour
1 c. Half and Half
1 tbsp. fresh parsley
1 1/2 tbsp. butter
 
Saute onions and bacon in butter. Add potatoes, water and seasonings. Cook 
until potatoes are soft. Add corn and Half and Half and milk. Heat. Thicken 
with flour and butter. Add crabmeat. Heat through. Garnish with parsley.

Kaleidoscope Smoothies
Here are the basic ingredients for a smoothie that changes colors, depending on 
your whim. 
 
2 cups ice
1 cup yogurt
Some fruit (such as a couple of bananas, a handful of strawberries, a can of 
fruit packed in its own juice)
I cup liquid (such as milk or juice)
Put all ingredients in a blender and mix on high for 1 minute. Serves 4. Can 
put into 3 ounce paper cups, cover with plastic wrap and insert wooden stick. 
Freeze.it now.

Crockpot Beef Simmer

6 slices bacon
2 onions, chopped
5 cloves garlic, minced
3 lbs. beef chuck roast
1/2 cup apple juice
1/2 cup beef broth
8 oz. can tomato sauce
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. dried thyme leaves
2 bay leaves
6 red potatoes, cut in half
1 pkg. baby carrots
8 oz. pkg. button mushrooms, sliced
1/4 cup chopped fresh parsley

Cook bacon in heavy skillet until crisp; remove bacon, crumble, and set aside. 
Cook onion and garlic in drippings until crisp tender, stirring frequently; 
remove from pan and set aside. Meanwhile, trim excess fat off beef and cut into 
2-1/2 pieces. Brown beef in bacon drippings, about 8-10 minutes. 

Add cooked onions and garlic, apple juice, beef broth, tomato sauce, salt, 
pepper, thyme, and bay leaves to beef and stir well. Place potatoes, carrots, 
and mushrooms in 4-5 quart crockpot. Pour meat mixture over vegetables in 
crockpot. Cover and cook on high 4-5 hours until beef is fork-tender. Stir well 
before serving. Remove bay leaves before serving. Sprinkle with parsley before 
serving.

1 cup all-purpose Flour
6 Eggs, slightly beaten, or equivalent Egg substitute
1 cup milk
1/4 cup melted butter or margarine
1/4 - 1/2 tsp. salt
Sweet Apple Slices **recipe follows**
Toasted sliced almonds, bananas, fresh or frozen berries, lemon wedges, 
or warm syrup

IN a large bowl, beat flour into eggs. Stir in milk, butter  salt. 
Pour into well-greased, cold 12-inch skillet or 2 (9inch) skillets. 
Bake at 400 for 18-20 minutes until pancake is puffed  golden. Loosen 
pancake all the way around. Serve in skillet. Top with favorite topping.

Sweet Apple Slices
HEAT 1-2 tablespoons butter or margarine in medium skillet. Core  
thinly slice 3 or 4 Cortland or McIntosh apples. Add to skillet  cook 
over medium heat about 7 minutes, or until apples are soft but hold 
their shape. Stir in 2 tablespoons firmly-packed brown sugar; cook 
another minute. Serve with pancake puff..

1-1/2 cups creamy rice hot cereal, uncooked 
1-1/2 cups  flour 
6 Tbsp. sugar 
2 Tbsp.  CALUMET Baking Powder 
3 eggs 
3 cups  fat-free milk 
6 Tbsp. butter or margarine, melted 
3   ripe medium bananas, mashed 
1/2 cup chopped PLANTERS Walnuts 

COMBINE cereal, flour, sugar and baking powder in large bowl; set aside. 
BEAT eggs, milk and butter in medium bowl with wire whisk until well blended. 
Add bananas; mix well.. Add to dry ingredients; stir just until moistened. 
(Batter will be slightly lumpy.) Let stand 10 min.; stir in walnuts. 
HEAT lightly greased electric griddle to 350°F or skillet on medium-high heat. 
Pour scant 1/4 cup batter onto griddle for each pancake. Cook until bubbles 
form on tops; turn over to brown other sides.
 
Makes 15 servings, about 2 pancakes each.

Parmesan Chicken

6  skinless, boneless chicken breasts 
1  cup all-purpose flour 
1  tsp. kosher salt 
1/2  tsp. freshly ground black pepper 
2  extra-large eggs 
1-1/4  cups seasoned dry bread crumbs 
1/2  cup freshly grated Parmesan cheese, plus extra for serving 
  Unsalted butter 
  Good olive oil 
  Salad greens for 6, washed and spun dry 
  Lemon Vinaigrette (recipe below) 

1. Pound chicken breasts until they are 1/4 inch thick. You can use either a 
meat mallet or a rolling pin. 

2. Combine the flour, salt, and pepper on a dinner plate. On a second plate, 
beat the eggs with 1 tablespoon of water. On a third plate, combine the bread 
crumbs and 1/2 cup grated Parmesan cheese. Coat chicken breasts on both sides 
with flour mixture, then dip both sides into egg mixture and dredge both sides 
in bread crumb mixture, pressing lightly. 

3. Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large sauté 
pan and cook 2 or 3 chicken breasts on medium-low heat for 2 to 3 minutes on 
each side, until cooked through. Add more butter and oil and cook the rest of 
the chicken breasts. Toss the salad greens with Lemon Vinaigrette.. Place a 
mound of salad on each hot chicken breast. Serve with extra grated Parmesan. 
Makes 6 servings. 

Lemon Vinaigrette:In a small bowl, whisk together the 1/4 cup freshly squeezed 
lemon juice (2 lemons), 1/2 cup good olive oil, 1/2 teaspoon kosher salt, and 
1/4 teaspoon freshly ground black pepper.

2-1/2 cups powdered sugar
7-oz. jar marshmallow creme
2 cups crushed chocolate sandwich cookies
1/2 cup salted cashew pieces, finely chopped
1/2 cup butter, melted
36 caramels, unwrapped
3 Tbsp. cream
1 cup salted cashew pieces
1 cup milk chocolate chips
1/4 cup peanut butter

In medium bowl combine powdered sugar and marshmallow creme. Mix well, then 
knead on powdered sugar-sprinkled work surface until smooth. Roll to an 8 
square, wrap in plastic wrap, and set aside. 
Preheat oven to 350 degrees F. Line an 8 square pan with foil and set aside. 
In small bowl, combine cookie crumbs, 1/2 cup cashew pieces and melted butter 
and blend well. Press into pan and bake for 8-10 minutes until crust is set. 
Unwrap marshmallow creme mixture and place on hot crust; set on wire rack to 
cool. 

Combine unwrapped caramels and cream in medium bowl and microwave on medium for 
4-6 minutes, stirring twice during cooking time, until blended and smooth. Add 
1 cup salted cashew pieces and mix well. Spread over marshmallow layer. 

In small bowl, combine chocolate chips and peanut butter; melt in microwave on 
medium power for 2 minutes; stir to blend well. Pour over nuts. Refrigerate 
bars until set, then store covered.

Stuffed Turkey Burger

- 3 pounds ground turkey
- 1/4 cup Italian seasoned bread crumbs
- 1/4 cup finely diced onion
- 2 egg whites, beaten
- 1/4 cup chopped fresh parsley
- 1 clove garlic minced garlic.
- 1 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 6 oz of grated provolone cheese 

1. In a large bowl, mix ground turkey, seasoned bread crumbs, onion, egg 
whites, parsley, garlic, salt, pepper, and provolone cheese.
2. Form into 12 patties.
3. Cook the patties in a medium skillet over medium heat, turning once, to an 
internal temperature of 180 degrees F.

Quick Sausage Crescents

1 can (8 oz.) reduced fat refrigerated crescent dinner rolls 
8   frozen BOCA Meatless Breakfast Links 

SEPARATE dough into 8 triangles.. Place 1 breakfast link at short end of each 
triangle; roll up. 
PLACE on ungreased baking sheet. 
BAKE at 375°F for 15 minutes. Serve with honey or maple syrup.
 
Makes 8 servings.

Tarragon Chicken

2 Tbsp. butter
1 Tbsp. olive oil
6 boneless, skinless chicken breasts
1 tsp. dried tarragon leaves
4 cloves garlic, minced
1 onion, finely chopped
1/2 cup frozen orange juice concentrate, thawed
1/2 tsp. salt
1 Tbsp. cornstarch
10 oz. can mandarin oranges, drained, reserving 1/2 cup syrup
Hot cooked pasta or rice

Melt butter with olive oil in large skillet. Add chicken, tarragon, garlic, and 
onion and cook over medium heat until vegetables are tender, about 8-10 
minutes. 
In small bowl, stir together orange juice concentrate, cornstarch and reserved 
mandarin orange syrup. Stir into chicken mixture. Reduce heat to medium. Cook, 
stirring frequently, until chicken is thoroughly cooked and tender and sauce 
has thickened, about 8-10 minutes. Stir in oranges and serve with hot cooked 
pasta or rice. 

Serves 6

Christmas Brunch Casserole

Make this up on Christmas Eve, refrigerate and bake on Christmas morning.

1 pound bacon
1 tblsp butter or margarine
2 onions, chopped
2 cups fresh sliced mushrooms
4 cups frozen hash brown potatoes, thawed
1 tsp salt
1/4 tsp garlic salt
1/2 tsp black pepper
4 eggs
1 1/2 cups milk
1 pinch dried parsley
1 cup shredded Cheddar cheese

Preheat oven to 400 degrees. Grease a 13x9 inch casserole dish. Place bacon in 
a large deep skillet. Cook over medium high heat until evenly brown. Drain, 
crumble and set aside. In a separate skillet, melt butter and fry onions and 
mushrooms until tender. Place potatoes in bottom of prepared dish. Sprinkle 
with salt, garlic salt and pepper. Top with bacon, then onions and mushrooms. 
In a large bowl, beat eggs with milk and parsley. Pour over casserole. Top with 
grated cheese. Cover and refrigerate overnight. Bake in preheated oven for 1 
hour or until set. If preparing and baking the same day, cook for 45 minutes.

Free Recipes Christmas Morning Casserole

Christmas Morning Casserole

2 pounds hot bulk sausage (mild can be used)
8 slices bread, crusts removed
3/4 pound grated sharp cheddar cheese
8 large eggs, beaten
3 cups milk
1 1/2 teaspoons salt
1 1/2 teaspoons dry mustard

In a large skillet, brown sausage, crumble and drain. Butter a 9x13 inch 
casserole dish. Place bread (torn into bite-sized pieces) in bottom of dish. 
Place sausage on top of bread. Sprinkle cheese over top. In a large bowl, mix 
beaten eggs, milk, salt and dry mustard. Blend well. Pour over other 
ingredients. Cover and refrigerate overnight. The next morning, bake at 350 
degrees for 45 minutes uncovered.. Slice into squares
