I don't really see what the problem is with using X11.app (other than
GIMP for Mac is a version or two behind).

There is a (very) simplified imitation of GIMP that do not use X11.

actually I'm not building against SVN, but to each and every official
release. I don't think that it makes any sense if a regular user is
trying to build GIMP unstable to the GTK/OS X pre alpha.
