Ok, I got it. To change the transaction entry placeholder text color:

I'm running Linux Mint 21 with GnuCash 4.11 (built from tarball) installed and
have no editing problems at all with it. Many of the interface teatures are
determined by common libraries on which GnuCash depends particularly changes in
the GTK libraries rather than in the gnuCash coding

I happen to have a Mint21 VM using VirtualBox I've been trying out so I
installed GnuCash to test and see if I get the same issue.
I don't. Everything works as expected. There is no gray box and I can
highlight amounts from the left or right with no problems.

The comments at the top of the sample CSS file from the Wiki define
