So, I have already written my document (which is more than 50 pages if I
remember well) in which the majority is Greek text but there is a _not_
so small part of english (commands and command outputs) spreaded all
over the document. So I don't think anybody (from the perspective of an
end-user), would sit-down and mark(re)define the text (no matter if
seeting the language to Greek and marking English or the opposite).

Well, you might say that this is my mistake. Accepted. But I don't see
this as an option now.

Redefining only the \xnames is enough for me. It works.

Well, I might need to re-define the Cross-references as well. (BTW,
can I re-define the cross-references the same way I did with the
others?).

In future I will be more careful now that I know that and I'll act
accordingly.

names if you set the document language to Greek (or polutonic Greek).

all :-(

Both of the following don't print an Appendix or Παράρτημα at
all :-(

Why don't you use Greek? Babel should save you the work to re-define the
names if you set the document language to Greek (or polutonic Greek).

\appendix is a declaration, it just tells "appendix starts here" and
LaTeX will give the next section heading a different number and layout..

Did you try with \appendixname?

Otherwise you should look in the babel documentation (or the greek
definition files for babel for the right command).

Because:
1. It translates english words in greeklish ;-). To exemplify "GRASS"
becomes "ΓΡΑΣΣ" --It's eXtremely funny-- :D

2. I get lot's of errors related with "\textfont", see screenshot [1]

Both of the following don't print an "Appendix" or "Παράρτημα" at
all :-(
