On the 2020 MBP, I cannot edit the signatures, cannot remove what is shown
there in the All sigs table.
On this 2012 MBP, I have what I want for each mail account. Is there a way

Yes, it is Rich text. I just played with this and was able to create a link. I
highlighted the text I wanted to use, pressed command-k to create the link, and
was prompted to put in the uRL. I'm not sure if this works in a signature, but
you can give it a try. The add link option is also found
