Hello its command shift F5 and you VO to start recording and you get options to
record some of or all the screen.

I usually use CMD + Shift + 5 to open the window to start it but I need a way
to start it without the support of VO.

Hmmm. Interesting. I do this all the time with my iPads, but had not tried it
with my iPhone. So, I just did, and it worked perfectly, including the ability
to record in QuickTime.
1. Connect the iPhone to the Mac with the USB charging cable.
2. Open QuickTime.
3. Unlock your iPhone.
Oh I forgot to answer this one. No I don't hear the iPhone through
the Mac.

The Avid Pro tools beta teem I'm on uses zoom to capture everything including
VoiceOver.
