have been functional solutions for me, but a couple of serious attempts at
full character ICE rigging set up similar to the rabbit sample wound up with
me going back to basi
There is another way to see more array elements than viewport can shows it
us - using the "log values" node. It cuts very long array as well, but at
least it outputs much more than viewport and we able to shift the range of
logged items on the fly.

whilst the values are displayed as a list in the centre of the object
and not per polygon when viewed directly , and if I do it in a
separate part of the tree after the array has been created to

What sort of tutorials do you want to see? Creating shapes from the ground up,
or something else?
What I have found is that the topo nodes themselves are not that complicated.
The hard part is the math and logic you need to control them. So maybe math
tutorials are needed

pretty sure I can repair the UVs using ICE, but I'm worried that
overwriting the existing UV set with ICE might make things unstable. And I
don't want to make a new ICE UV set.

if your UVs are per point vectors, then a simple workaround would be
to store a pair array: PointPosition -> UV
then after your topo changes, lookup back on this array to retrieve UVs.
this works if you don't happen to have overlapping points.

Oleg implemented a work around in ImplosiaFX to maintain UVs when
modelling with ICE. I think he has detailed it before on this list...
