I second mediagoblin. i've used it locally on my own network before, as a
local media server and it works very well
if you have separate drives encrypted, then yes you have to unlock all of
them.
However, it should be possible to unlock just one of them and have a keyfile
(on the first encrypted drive) that automatically unlocks all the other
drives.
