My experience with audio/video calls with XMPP/Jabber clients is that it quiet often it doesn't work or it's very unreliable. I had much better experience with Tox clients, such qTox and uTox. I've only tried those on Parabola though and I don't even know if they are available on Trisquel

I'm pretty sure that if you install 'gstreamer0.10-plugins-bad' and 'gstreamer0.10-plugins-ugly' you'll get all widely used codecs. Trisquel 7 installs them by default. 'libfaac0' is the only codec package I found that 'ubuntu-restricted-extras' installs, but isn't available in Trisquel.
