The output of 'fc-match 細明體' is DejaVuSans.ttf: DejaVu Sans Book. It's the point. And I'm sorry, you should check whether zh_TW BIG5 in /var/lib/locales/supported.d/local . If not, just add it, and run sudo locale-gen. Then you could run LANG=zh_TW evince xxx.pdf zh_TW default use BIG5, so do
