Have you gone to Settings > General > Keyboards and added the third party keyboard you want to use? You also have to allow full access to the keyboard which often has to be done in the Settings for the specific keyboard you are using, e.g. for GBoard it might be Settings > GBoard Once all that

The short answer is that all keyboards are not accessible. I have tried many keyboards. If you are just looking for a simple typing experience stick with the iOS keyboard. I personally love the FlickType keyboard. It’s created for blind and low vision users and is a gesture based keyboard.
