The ECU stores the codes that it reads for feedback.  If it senses that the 
voltage in the MAF is higher because of acceleration, then it will hold add 
more fuel into the mix because it thinks its running faster.  The O2 sensor 
senses the additional oxygen and backs off the fuel and retards the timing.  
There is a combination of things the ECU does to make sure the fuel/air ratio 
remains static.  It adjusts parameters all the time.  So if you drag race all 
the time and nothing else, then the car stores codes that when you hit the 
gas, it will fully advance the timing and let the fuel in at full blast.  It 
learns the patterns and stores them as the closed loop circuit and reads them 
all the time when you hit the gas hard.   Nissans do this I know of and maybe 
Mistubishis also and maybe toyota, they run MAF systems too.
