In terms of logging, you can check out the mailet logs for entries from the RemoteDelivery mailet, and increase the logging level in SAR-INF/environment.xml.
Thanks -- already set to DEBUG for spoolmanager, smtp and pop3 while I try and configure things so that I'm not running an open relay ;-) Also as a result of all this config activity the server has been up and down several times, but this has NOT solved the "stuck mail" problem I originally described.
I must say that I found the default config pretty horrible in those terms. Love the whole thing, though! Would also /humbly/ submit that an NNTP server is not really part of a normal "mail-server" setup, and the NNTP blocks and config should be commented out in the default distribution.
