I haven't tested anything but it I think you would just need to configure, or probably remove, the remote delivery mailet and the basic functionality would be done.
you would also want to write some stuff to collect the data your after and bin the incoming mail.
Make this code efficient because you are about to sip from a firehose.
Out of interest, why do you want to attract spam? What is the objective for all this?

TRUE... and James has a fair capability of appearing one as such in its default configuration. You only gotta setup your ALL email consumer matcher and draw results.
