Hyderabadi here. With a mum who my father called “an artist in the
kitchen”.
It took me ten years to squeeze the biryani recipe out of her.

But I have a question for you. What flavours/textures did you single out as
particularly Hyderabadi, that you want to learn to cook? I ask because
there are many variations and I want to know what you’re looking for.

Overall though, I highly recommend 660 curries by Raghavan Iyer (go easy on
the ginger garlic quantities because I suspect Indian ginger garlic to be
much more intense) for Indian cooking Building blocks.

I’d give you my mom’s recipe but I promised her I’d keep it a secret :)
