I can say this because I stumbled into an excellent cooking class a few years ago (the instructor was actually a Pakistani lady from Dubai but whatever) and can make a pretty decent biryani for an old white guy, with all the proper layering and so on. But OMG it’s so much work, it literally takes hours.
