I've settled bills in hotels with large-ish cash payments before (Hilton at $175 to 180 a day for a week and such). No problems there.
My cc# gives me reasonably better rates than carrying cash so I'd typically use it for bigticket purchases.
Even with chip and pin being kind of popular only in the UK (so people traveling abroad there typically retain an old card) - most places I've been to - hotels etc - are quite familiar with foreign credit cards, not to boggle at them
