I vouch for the Sanjeevanam lunches. If you go on a weekday (when there isn't a crowd and when you won't need to book a place) their waiters usually have the time and patience to explain the order and reasoning for the courses to you. The vazhai thandu pachadi and olan (banana stem in yogurt and pumpkin in coconut milk) are especially good. The other place I would suggest, but again, like the Gujarati Bhavan, I have no idea if it is still functional, is Annalakshmi on Mount Road. It used to be a fantastic place for long Sunday lunches. They served traditional south Indian 'meals' on silver plates, and (IIRC) had volunteers (often doctors, well-known businessmen, etc.) waiting tables as 'seva' for the organisation that ran the place. Dakshin in Park Sheraton has my vote too, wallet permitting. Eden has decent vegetarian Continental food -- they now have a branch in some hotel on Village Road. There used to be a lovely dessert place called Painted Platters off Kasturi Rangan Road, where you could laze for hours under the raintrees reading a book, and only (very) occasionally would someone ask if you would in fact like to order something. And their desserts were pretty good too. I don't suppose it is still around - couldn't have been very profitable to run a place like that.
