I know a lot of "coastal" Americans call themselves vegetarian coz they eat only fish and no "meat".
I am vegetarian .. when I'm at home. Because my family is all vegetarian.
Elsewhere, vegetables are mostly what the food eats. Oh, e&oe the odd
salad, mashed potatoes and veg on the side of a steak etc etc.
