Dee  and Dan,
Thus far Xyitol has been proven safe and highly recommended by folks.  I have a 
blueberry extract that I sometimes mix with water because it is rather plain 
tasting.  Upon mixing in the Xyitol, the extract which is a deep blue when it 
mixes with  the water, became as if it were bleached out.  Does chemical 
reaction make either  the blueberry extract or the Xyitol dangerous, or both.

That is why it is good to try to understand what is going 
on.  On the other hand, it is also safe most of the time to 
be cautious.
