Wouldn't it be the moisture inside the kernel that would get hot, just as it does in microwave popcorn? This is something I don't indulge in, so I can't say what a microwaved popcorn kernel looks like just before it pops, but in cooking oil on the stovetop it looks pretty much like a regular ol' kernel 'til it goes off; startling, in fact!
