I think it may be important to use more suface area and distance (resistance) in proportion to the current used to keep the particles small. I notice more color and flavour in a batch if I put the electrodes closer together, even using rolled-out ingots.
If the color is undesireable (larger particles) then increasing the surface area should be as good as increasing electrode distance to dissipate the power and result in smaller particles at given concentration.
