Generally speaking, the longer it takes , the better the water is. Use
some of your last batch to start the next.
Since the time it take to get things started varies with the
water...sometimes by hours....timing a batch without knowing where you are
to start with, is impossible to do with any degree of accuracy.
However, that said and due to the total lack of doseage protocals that
make any sense and the near impossibility of coming to harm, your taste
buds, eyeballs and some intuition will suffice.
The rule of eyebuds: If it tastes like old rusty pipes and/or looks like
really strong stuff under a strong flashlight beam or laser pointer...use
less.

started to happen but it finally did. Then I let it cook for another 30
minutes. I guess I need to use a different brand if water. Been using
