Thanks, the recipes I found googling "flat bread recipes" all contained a LOT of junk. In the meantime while I am searching for spelt (will probably have to mail order, but haven't entirely given up on a local source, I haven't been to the next town yet) what about other grains? Kamut, Teff, Rye, Barley, Buckwheat? I believe any of those would be better than modern wheat? I'd like to give Spelt a try, but need a fill-in............... I remembered I had either spelt or amaranth from a mail order source that had bugs in, and I threw it out. I prefer to get my B-12 from other sources than insect contamination of grains.

Lotta work. Take the flour, blend in a smidgin of fine oil ( organic non DMR coconut, or olive) add some unaltered salt, water for effect - ( changes with the flour and day) till spongy and just handleable. See how to make Chappattis : http://ashycook.topcities.com/breads/chappatis.htm
