We're using Polycom SoundPoint phones (330's and 650's) so the following line 
caught my attention.

Looking at the Registration section of my own phone in SipX there is a choice 
of Primary or Secondary Registration Server in the Registration section. Do I 
add the Audiocodes as the Primary or Secondary reg server? Primary I'd imagine 
but I thought I'd ask :)

There's really not much to it. You turn SAS on and set the phone's 
outbound proxy to the Audiocodes gateway port 5080 and that's it. Works 
every time.
