I don't think I can ever fix it, as I have no information as to what it causes 
it. I see no problem, either on 10.6 or 10.5. So I suspect there's something 
wrong with your system, perhaps the fonts cache.

You set a default app using the Finder Get Info window for a file, using the 
Change All button.
