Click on the "Chart Appearances" toolbar button or menu Preferences > Chart Appearances. At the bottom you'll see an option to make the stuff below the horizon invisible. If you want to see below the horizon, be sure it's off.
If you have a polar projection, the horizon is irrelevant. You only get the horizon feature if you have an equatorial projection. You can change projections using the toolbar button or the Preferences menu.
