Thanks for the suggestions guys. I was in 'polar projection' so I changed it to 'zenithal projection'. In Preferences->Chart Appearance the 'Invisible' checkbox is checked and the ground colour is set to green (one of the 'Basic colors' from the color-selection dialog).
Stars below the horizon are no longer visible (what I wanted) but the ground is black rather than green (not that that bothers me particularly - I just can't understand why!) Turning sky colour on/off works as expected BTW, just in case that is relevant in any way.
