I'm running it in its own VM with 1GB of dedicated RAM, the recommended basics are twice that.
In terms of usage, it can be used both via suitable email clients (I use Evolution with the Zimbra connector) and the web interface. As well as mail it comes with Calendering (you can have shared as well as personal calenders) and IM.
