You know, if this was happening on a LAN, you would break out the frame sniffer and see what was really going on at the wire level. Is there such a thing as a WLAN frame sniffer so you could trap 10 seconds of activity and look for over-the-air disassociate frames and speed-shift directives and such?

Channels 1, 6, & 11 should always be used for a 3 AP config unless they cannot be for some reason. Or any 2 channel combination of the 3 for a 2 AP setup. In the eveny you have to use channels that have overlapping frequencies it is best to use sector antennas with proper separation between sectors.
