I used Migration Assistant just last week to transfer my user profile
and applications from my old G4 to a new iMac.

This is part of the iMac setting up process: you can specify you want
to import from another Mac, before you've set up an account or
anything - you just have to connect the two machines with a FireWire
cable and put the old one into Target Disk Mode -
http://support.apple.com/kb/HT1661 - though. It worked almost
perfectly, with only a bit of tweaking of iTunes library needed.

If the G5 dies, you may be able to do this from the hard disk anyway:
there's an option to migrate 'from another volume' but not sure
whether you'll have to complete setup before mounting the hd
externally. If you do, set up a temporary account to do the transfer
as your old user account will be available afterwards.
