Have you tried the standard SMC & PRAM resets? Also disconnecting all
USB peripherals and putting the MacPro to sleep?
I'm seeing a lot of this in the Console:

initDevice failed
ring any bells?
I can't of course reproduce the panics at will...it's only when I'm away;)
