Have you tried the standard SMC & PRAM resets? Also disconnecting all USB peripherals and putting the MacPro to sleep?
more exploring seems to show a link between using the SSD start-up. At least, I can't reproduce it from the main hard drive. Does that sound like a coincidence? (or is that impossible to answer?)

I've reinstalled Lion and done other maintenance and so far all is fine -- except still, with the SSD, getting these 'crash-on-sleep' panics...:(

They will take it away and look again, I'm just waiting til I go away for a few days -- but if you have any ideas about whether the start-up disk could be a factor, I'd be interested,...
