I'm at the other end of the spectrum as I like the Mail.app, and especially the latest version with its 'conversations' option. I think it works perfectly well with a MobileMe mail account using IMAP, into which I feed all my Gmail Inbox traffic so no need for more than one Mail account. I've found Smart Mailboxes to be especially useful in helping to prioritise mail. My one beef is that I'd like to fix the width of the Mail.app window. It fluctuates according to message content and whether you hide/show mailboxes and then you have to manually resize the window. I think this is a Lion, rather than Mail.app specific issue.
