To me an euphemism is the use of an indirect term, or a mild term, instead of 
one 
that is harsh eg pass away instead of die. 

elderly person is really not harsh but would take the place of old or aged 
which can 
be harsh.

Now I think tofu-eating just might be derogatory, I have never heard it before.

The term 'budgie'  ( bird of the parrot family) or 'granolas' ( a type of 
natural cereal) 
is a slang put down for some of the people who live close to nature and eat 
mainly 
nuts, seeds and other non-prepared foods.

I like tofu, especially in soup.
