if the exhaust is run at the overhead,
and there is no potential for burns
from that run, then what other guard
would we need, beyond the air gap?

I'm more interested in what everyone else is using.  The standard is
very vague: "11.5.3.3 The exhaust pipe shall be covered with high
temperature
insulation or otherwise guarded to protect personnel from injury."
