They need someone with Special Hazards experience. With those kinds of
quantities you are getting into Control Areas and potential for H-occupancies
within the building which can trigger all kinds of other requirements. Doesn't
sound like this architect has much experience with those kinds of facilities.

The scary part is the Architect was in the meeting and didn't have a clue. One
of the owners said that there could be as much as 300 gallons of 190 proof
that the they bring in in carboys, then re-distill till into various beverages.
I'm going to tell him to get a fire protection eng. involved before I go much
further on this.

Grain alcohol as a Class IA? Someone needs to revisit that. Protecting Class
IA flammables and production areas can get into some hairy building, fire and
mechanical code requirements. People tend to look at only flash point on
Flammables and forget that the difference between Class IA and Class IB is
based on Boiling Point.

In most cases if you are actually dealing with Class IA flammables you're
probably going to puttin' down some foam.

We'll now return to our regularly scheduled program.......................

There's not really a "brewery" section in the codes and standards but you're
dealing with very low alcohol-content liquids on the beer side, so brewing and
storage are likely ordinary hazard there. And a restaurant is what it is. The
issue is the still and how much high-test will be produced; we did a
micro-distiller here in San Diego County who has one still but it's of a size
that will produce about 100 gallons at a time of nearly pure grain alcohol and
that required special attention as a Class IA flammable/combustible liquid. I
would definitely look at it from the FCL and haz-mat perspective or bring in a
code consultant with some experience. Even with sprinklers, you may find
yourself needing separate fire control areas for the distilled spirits ...

Can anyone point me in the right direction regarding the correct hazard for
sprinklers in an approximately 6000 sq. ft. 2 story + basement, Brewery / Still
Works / Pub / Restaurant. I have looked through IBC 2009 and found nothing ,
NFPA 13, 2007 says distilleries are Ordinary Group II. I'm thinking that may
not be adequate for some of the areas. In our kick off meeting they were
discussing explosion proof lighting and switches in the approx. 677 sq. ft.
bonded storage room, and the 630 sq. ft. Distillery area. Anyone have any
thoughts?
