Just remembered one more trick I once saw. A technician I worked with had a chain wrench that resembled a small oil filter wrench with the head at a right angle. It reminded me of a plumbers basin wrench, but it had a chain on the end instead. He was able to work it into a wall and wrap it around the CPVC fitting to hold back on the fitting while removing a sidewall sprinkler for replacement. I'm not sure where he found it, but you might be able to find a similar tool and squeeze it up beside the sprinkler in the hole in the freezer ceiling.
