Perhaps you can simply use the arch command to detect arm64 and set the env variable?
I'm using it to tell macOS how to run LMS already. Alas, the startup items are little more complicated, as they don't use the same startup script. Thus I'll have to either change them to use the script, or modify the definition to apply this additional command if needed. Which I don't know yet how to do.
