I believe limestone is a great stone to start carving.
(especially if you have an unlimited supply!!)
Since it is a "medium" hardness (rated 4 on a Mohs scale
of 1 to 10) it is a good starting place.
It will give a nice resistance to the tools, but not too
much to deter your efforts.
Limestone is a sedimentary stone, composed of minute
rounded concretions. It is about twice as hard as
alabaster and more roughly textured. It will support
intricate carving, severe undercutting, and is excellent
for creating textures. It can be polished, but not as
fine as alabaster or marble, however you may like it
left unpolished...
